It’s the most wonderful time of the year – well, at least for all the fall fanatics out there. That means we’re breaking out our favorite sweaters, running to our local cafe for pumpkin spice lattes, slowing down as shorter days overtake long summer nights, and switching up what’s on our plates to include more hearty, warming dishes.
As a vegan, I look forward to all the plant-based recipes I can test out in the kitchen. So, if you’re anything like me and want to experiment with new plant-based recipes, I’ve got you covered. Here are some delicious plant-based recipes to help ring in the new season.
1. Vegan Moroccan Stew
What better way to balance the cooler fall months than with a warm, Moroccan-inspired stew? This stew only takes about 30 minutes and doesn’t require too many ingredients (a win-win). All you need to pull this dish together are potatoes, chickpeas, lentils, carrots, tomatoes, greens, vegetable broth, and a combination of spices.

2. Butternut Squash & Swiss Chard Lasagna
This plant-based lasagna is packed with all the right stuff for a good fall dish – butternut squash, mushrooms, and homemade (tofu) cheese. Everything else from the fresh rosemary to the homemade sauce is just icing on the cake. (p.s. This recipe is great if you want to cut back on carbs because the butternut squash replaces the pasta.)

3. Creamy Vegan Pumpkin Mac and Cheese
The best thing about creamy mac and cheese is that you can serve it as a main or side dish. If you’re aiming for your mac and cheese as a side, pair it with other plant-based staples like tofu or roasted potatoes (or go for the classic “chicken tenders and mac and cheese” combo with a healthy plant based substitute).

4. Smoky Chipotle Vegan Soup
You can’t think of cold weather without thinking of a steaming bowl of soup. That’s why this smoky chipotle vegan soup is a must for this fall. It’s creamy and spicy and, might I add, it’s literally made for those grilled-cheese types of nights.

5. Vegan Pumpkin Alfredo
Nothing says fall like a pasta dish paired with a creamy pumpkin-flavored sauce enhanced with woodsy herbs and nutmeg. Plus, this dish is one-pot improved and only takes about 45 minutes, so it saves you time in the kitchen and can be a go-to dish this season.

6. Spicy Potato Kale Bowl (with Tahini Dressing)
If you’re craving something a little lighter this fall season, then this spicy potato kale bowl is the answer. It’s quick and easy to make and doesn’t leave out the necessities for a good fall meal – grounding potatoes, warming seasoning, thick tasty sauce, and a hint of spiciness.

9. Mushroom Wild Rice Soup
Anything that only takes a slow cooker, a few ingredients and just 15 minutes count me in! This dish features wild rice mushrooms, carrots, onions, garlic, celery, vegan butter, coconut milk, vegetable broth, flour, and select spices.

10. Vegan Baked Spaghetti
Spaghetti – but make it ten times better with this unique recipe that calls for a “meaty” homemade tomato sauce and vegan mozzarella cheese. If you’ve never baked your spaghetti, then now’s the time.
